BBQ Chicken Coleslaw Wraps

These BBQ Chicken Coleslaw Wraps are the kind of easy meal I love making when dinner needs to feel fun without a lot of fuss. You get smoky chicken, crisp coleslaw, and a soft wrap all in one bite, which makes them perfect for busy weeknights or casual lunches.

Ingredients
  

  • 2 cups cooked chicken shredded or chopped
  • 1 cup BBQ sauce
  • 3 cups coleslaw mix or shredded cabbage and carrots
  • 0.25 cup mayonnaise
  • 0.25 cup plain Greek yogurt optional for a lighter slaw
  • 1 tbsp apple cider vinegar
  • 1 tsp honey or maple syrup
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 4 soft flour tortillas or wraps
  • optional toppings: sliced red onion, pickles, or chopped cilantro

Instructions
 

  • Step 1, Make the coleslaw
    In a large bowl, mix the coleslaw with mayonnaise, Greek yogurt if using, apple cider vinegar, honey, salt, and pepper. Toss until everything is lightly coated. Taste and adjust the seasoning if needed, then let it sit while you prepare the chicken.
  • Step 2, Warm the chicken
    Place the cooked chicken in a skillet over low to medium heat. Add the BBQ sauce and stir until the chicken is warmed through and evenly coated. If the mixture looks too thick, add a small splash of water to loosen it slightly.
  • Step 3, Assemble the wraps
    Warm the tortillas so they are easier to fold. Spoon some coleslaw into the center of each wrap, then add the BBQ chicken on top. Add any extra toppings you like, such as sliced onion or cilantro.
  • Step 4, Fold and serve
    Fold in the sides of the tortilla, then roll it up tightly from the bottom. Slice in half if you like, and serve right away while the wraps are fresh and the chicken is warm.

Notes

Store the chicken and coleslaw in separate airtight containers in the refrigerator. The chicken will usually keep for up to 3 days, and the slaw is best enjoyed within 2 days for the freshest crunch. Reheat the chicken gently in a skillet or microwave until hot, then assemble the wraps just before serving.
