Ingredients
  

Chicken Marinade

  • 1 lb chicken breasts or thighs sliced into bite-size pieces
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 2 tbsp lime juice
  • 1 tsp lime zest
  • 2 tbsp fresh cilantro chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.75 tsp salt
  • 0.25 tsp black pepper

Bowls

  • 3 cups cooked rice white, brown, or jasmine
  • 1 can black beans rinsed and drained
  • 1 cup corn fresh, frozen, or canned
  • 1 avocado sliced
  • 1 cherry tomatoes halved
  • 0.25 red onion thinly sliced
  • 0.5 plain Greek yogurt or sour cream for serving
  • Optional toppings shredded lettuce, jalapeƱo slices, or extra cilantro

Instructions
 

  • In a bowl, toss the chicken with olive oil, garlic, lime juice, lime zest, cilantro, cumin, smoked paprika, salt, and pepper. Let it sit for 10 to 15 minutes so the flavors start to soak in.
  • Heat a skillet over medium-high heat, then add the chicken in a single layer. Cook until golden and cooked through, stirring occasionally so the pieces stay juicy and lightly caramelized.
  • While the chicken cooks, warm the rice, beans, and corn. This makes the bowl more comforting and helps everything come together quickly.
  • Spoon rice into each bowl, then top with chicken, black beans, corn, avocado, tomatoes, and red onion. Add any extra toppings you like.
  • Drizzle with yogurt or sour cream, then finish with fresh cilantro and a squeeze of lime. Serve right away while everything is warm and vibrant.

Notes

Store the chicken, rice, and toppings in separate airtight containers in the refrigerator for up to 4 days. Reheat the chicken and rice gently in the microwave or on the stove, then add the fresh toppings after warming. Avocado is best sliced fresh just before serving.
