Ingredients
  

Shortbread Base

  • 1 cup unsalted butter softened
  • 0.5 cup powdered sugar
  • 2 cup all-purpose flour
  • 0.25 teaspoon salt

Caramel Layer

  • 1 cup soft caramel candies unwrapped
  • 2 tablespoons milk

Chocolate Topping

  • 1.5 cups milk chocolate chips
  • 1 teaspoon alcohol-free vanilla extract

Instructions
 

Shortbread Base

  • Cream together butter and powdered sugar until light. Add flour and salt, mixing until a dough forms. Press into a lined baking pan and prick with a fork. Bake at 350°F (175°C) for 18-20 minutes, then cool completely.

Caramel Layer

  • Melt caramel candies with milk in a saucepan over low heat, stirring constantly. Once smooth, pour over the cooled shortbread and spread evenly. Let set until slightly firm.

Chocolate Topping

  • Melt chocolate chips and vanilla extract together until smooth. Pour over the caramel layer, using a spatula to spread. Let cookies chill until chocolate is set, then slice into bars or squares.

Notes

Store in an airtight container at room temperature for up to one week or refrigerated for up to two weeks. For best results, let each layer cool completely before adding the next. Wipe your knife between cuts for neat edges. Add a sprinkle of sea salt to the chocolate layer for a sweet-salty twist, if desired.
