Ingredients
  

Chia Pudding Base

  • 0.25 cup chia seeds
  • 1 cup milk of choice dairy or plant-based
  • 0.25 cup strong brewed coffee cooled, divided
  • 2 tbsp maple syrup or honey divided
  • 1 tsp alcohol-free vanilla extract

Yogurt Coffee Cream

  • 1 cup Greek yogurt

Toppings

  • 1 tbsp unsweetened cocoa powder for dusting, or as desired
  • 2 tbsp dark chocolate shavings optional, for garnish

Instructions
 

Chia Pudding Base

  • In a bowl, whisk together chia seeds, milk, half the coffee, half the maple syrup, and vanilla extract. Stir well, then let the mixture sit for 10 minutes. Stir again to prevent clumps, then refrigerate for at least 2 hours or overnight.

Yogurt Coffee Cream

  • In a separate bowl, combine Greek yogurt with the remaining coffee and maple syrup. Mix until smooth and creamy.

Assemble

  • Layer the chilled chia pudding and yogurt coffee cream in glasses or jars. Start with chia pudding, then a layer of yogurt cream, and repeat as desired. Dust the tops with cocoa powder and garnish with chocolate shavings if you like.

Notes

Store assembled chia puddings covered in the refrigerator for up to 4 days. Stir before serving and add toppings just before eating for the best texture. For a dairy-free version, use plant-based milk and yogurt. Adjust sweetness to taste with more maple syrup or honey if desired.
