  • 1 Spoon or piping bag optional

Ingredients
  

  • 6 large eggs hard-boiled and peeled
  • 3 tbsp mayonnaise
  • 1 tsp ranch seasoning
  • 1 tsp taco seasoning
  • 1 tsp lime juice
  • salt to taste
  • black pepper to taste
  • 2 tbsp shredded cheddar cheese
  • 1 tbsp tomato diced, seeded
  • 1 tbsp green onion sliced
  • 1 tbsp cilantro chopped
  • crushed tortilla chips for garnish

Instructions
 

  • Slice the hard-boiled eggs in half lengthwise. Gently remove the yolks and place them in a medium bowl. Arrange the egg whites on a serving platter or tray.
  • Mash the yolks with mayonnaise, ranch seasoning, taco seasoning, lime juice, salt, and black pepper until smooth and creamy. Taste the filling and adjust the seasoning if needed.
  • Stir in the shredded cheddar cheese, then mix until evenly combined. The filling should be thick enough to spoon or pipe into the egg whites.
  • Spoon or pipe the yolk mixture into each egg white half. Try to keep the tops neat so the eggs look tidy and inviting on the platter.
  • Top each egg with diced tomato, green onion, cilantro, and a few crushed tortilla chips. Serve right away, or chill until you are ready to bring them out.

Notes

Store leftover deviled eggs in an airtight container in the refrigerator for up to 2 days. For the best texture, keep the toppings separate if possible and add them just before serving. These eggs are meant to be served cold, so reheating is not recommended. If they have been sitting out for more than 2 hours, it is best to discard them.
