Ingredients
  

  • 4 cups curly kale de-stemmed and chopped
  • 2 ripe peaches sliced
  • 1 cup fresh blueberries
  • 0.33 cup feta cheese crumbled (or plant-based feta)
  • 0.25 cup sliced almonds or walnuts
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon alcohol-free vanilla
  • 1 pinch sea salt and black pepper

Instructions
 

Salad

  • Place chopped kale in a large bowl. Drizzle with a touch of olive oil and massage the leaves with your hands for about two minutes until soft and vibrant.
  • In a small bowl, whisk together olive oil, honey or maple syrup, lemon juice, alcohol-free vanilla, salt, and pepper.
  • Add peaches, blueberries, feta, and nuts to the massaged kale. Drizzle with the dressing and toss gently until evenly coated.
  • Transfer to a serving bowl, sprinkle a few extra blueberries or nuts on top, and enjoy right away.

Notes

Best enjoyed fresh. To make nut-free, use pumpkin or sunflower seeds in place of nuts. Dressing can be prepared ahead, but toss salad just before serving for best texture.
