Ingredients
  

Salad

  • 2 cup cooked chicken breast diced or shredded
  • 1.5 cup sweet corn kernels fresh or thawed from frozen
  • 1 cup English cucumber diced
  • 0.25 cup cilantro freshly chopped
  • 0.25 cup red onion finely diced
  • 0.5 cup crumbled feta or cotija cheese

Creamy Dressing

  • 0.25 cup mayonnaise
  • 0.25 cup Greek yogurt
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp chili powder
  • salt and black pepper to taste

Instructions
 

Prepare Ingredients

  • Dice or shred the cooked chicken. Chop all your veggies, and crumble the cheese. This helps ensure every forkful is evenly mixed and delicious.

Make Dressing

  • In a bowl, whisk together the mayonnaise, Greek yogurt, lime juice, chili powder, and a generous pinch of salt and pepper until smooth.
