Ingredients
  

  • 2 cups cooked chicken breast chopped or shredded
  • 2 cups corn fresh or frozen, cooked and cooled
  • 1 cucumber diced
  • 0.25 cup red onion finely chopped
  • 0.25 cup fresh cilantro chopped
  • 0.33 cup mayonnaise
  • 0.25 cup plain Greek yogurt
  • 2 tbsp lime juice
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.75 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup feta cheese crumbled

Instructions
 

  • Dice the cucumber, finely chop the red onion, and chop the cilantro. If your corn is fresh, cook it until tender, then let it cool completely.
  • In a large bowl, whisk together the mayonnaise, Greek yogurt, lime juice, garlic powder, smoked paprika, salt, and black pepper until smooth and creamy.
  • Add the chicken, corn, cucumber, red onion, and cilantro to the bowl. Gently fold everything together so the dressing coats the salad evenly.
  • Top with crumbled feta, give it one final taste, and add a little more lime juice or seasoning if needed. Serve right away or chill for a short time before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Since this is a chilled salad, it does not need reheating.
