Servings 6 eggs

Equipment

  • 1 Saucepan
  • 1 bowl
  • 1 Ice Bath
  • 1 Serving Plate

Ingredients

  • 6 large eggs
  • 3 tbsp mayonnaise
  • 1 tsp yellow mustard
  • 1 tsp white vinegar
  • 0.125 tsp salt plus more to taste
  • 0.125 tsp black pepper
  • paprika for garnish
  • food coloring gel or natural black coloring for the spiderweb effect
  • water for the coloring bath

Instructions

  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a gentle boil, then reduce the heat and simmer for about 10 to 11 minutes. Transfer the eggs to an ice bath so they cool quickly and peel more easily.
  • Carefully tap the shells all over so they crack, but stay on the eggs. Mix a few drops of food coloring into a bowl of water, then soak the cracked eggs in the colored water for several hours or overnight in the refrigerator. The dye will seep into the cracks and create the webbed look.
  • Peel the eggs gently under cool running water. Slice each egg in half lengthwise and remove the yolks into a bowl.
  • Mash the yolks with mayonnaise, mustard, vinegar, salt, and pepper until smooth and creamy. Taste and adjust the seasoning if needed.
  • Spoon or pipe the filling back into the egg whites. Sprinkle lightly with paprika, then arrange on a serving plate and enjoy right away or chill until ready to serve.

Notes

Use eggs that are a few days old if you can, since they usually peel more cleanly. If you want the spiderweb pattern to stand out more, let the eggs soak in the colored water a little longer. A piping bag or zip-top bag with the corner snipped off makes the filling look extra neat.
