- 1 teaspoon white vinegar
- 0.25 teaspoon salt plus more to taste

- 1 small beet cooked and peeled, for decorating, or a few drops of beet juice
- 1 carrot slice or olive slice for each “pupil”
- 1 fresh chives or parsley optional, for serving
Place the eggs in a saucepan and cover with cold water. Bring them to a gentle boil, then reduce the heat and simmer for about 10 minutes. Transfer the eggs to an ice bath and let them cool completely.
Peel the eggs carefully, then slice them in half lengthwise. Remove the yolks and place them in a medium bowl.
Mash the yolks with mayonnaise, Dijon mustard, white vinegar, salt, and black pepper until smooth and creamy. Taste and adjust the seasoning if needed.
Spoon or pipe the yolk mixture back into the egg whites. Keep the filling slightly mounded so it looks full and festive.
