Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon smoked paprika plus more for topping
  • 1 to 2 teaspoons turkey bacon finely chopped, cooked crisp
  • 1 to 2 teaspoons hot sauce to taste
  • salt and black pepper to taste
  • fresh chives or parsley for garnish

Instructions
 

  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a gentle boil, then reduce the heat and simmer for about 10 minutes.
  • Move the eggs to an ice bath or run them under very cold water until they are cool enough to handle. Peel the shells carefully, then slice each egg in half lengthwise.
  • Scoop out the yolks and place them in a bowl. Mash them with mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, hot sauce, salt, and pepper until smooth and creamy.
  • Stir in the cooked turkey bacon for extra texture and a savory smoky bite.
  • Spoon or pipe the filling back into the egg whites. Finish with a light sprinkle of smoked paprika and fresh chives or parsley.

Notes

Start with eggs that are not super fresh, since they are usually easier to peel. Chilling the eggs before filling them also helps the yolk mixture stay neat and creamy. If you are piping the filling, let it rest in the fridge for a few minutes first so it firms up slightly. A tiny pinch of salt right before serving can also brighten the flavor.
