  • 1 lb ground beef
  • 2 cups cooked rice white or brown
  • 3 cloves garlic minced
  • 1 tbsp ginger freshly grated
  • 3 tbsp soy sauce
  • 1 tbsp brown sugar or honey
  • 1 tbsp gochujang
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 green onions sliced
  • 1 cup carrots shredded or thinly sliced
  • 1 cup cucumber sliced
  • 1 tbsp sesame seeds for finishing
  • 2 eggs optional for serving

Instructions
 

  • Start by cooking your rice so it has time to steam and fluff while you prepare the beef. Warm rice creates the best base for meal prep bowls.
  • Set a skillet over medium-high heat and cook the ground beef until browned and no longer pink. Break it into small crumbles as it cooks for a better texture in each bite.
  • Add the garlic and ginger, then stir in the soy sauce, brown sugar or honey, gochujang, sesame oil, and rice vinegar. Let everything simmer for a few minutes so the beef absorbs the flavor.
  • Spoon rice into meal prep containers or serving bowls, then top with the spicy beef. Add carrots, cucumber, and green onions for freshness and color.
  • Sprinkle sesame seeds over the top and add a cooked egg if you like. Serve warm, and enjoy the mix of spicy, savory, and crisp textures.

Notes

Store the beef, rice, and vegetables in separate containers if possible. They will keep in the refrigerator for up to 4 days. To reheat, warm the beef and rice in the microwave or on the stovetop until hot. Add the fresh toppings after reheating so they stay crisp and bright.
