Spicy Crispy Deviled Eggs

Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 pinch salt or to taste
  • fresh black pepper to taste
  • 2 tablespoons panko breadcrumbs
  • 1 tablespoon olive oil
  • 1 to 2 teaspoons chili oil
  • 1 teaspoon finely chopped chives optional

Instructions
 

  • Place the eggs in a saucepan and cover with cold water. Bring to a gentle boil, then lower the heat and cook until the yolks are set. Transfer the eggs to ice water so they cool quickly and peel more easily.
  • Once the eggs are fully cooled, peel them carefully and slice them in half lengthwise. Gently remove the yolks and place them in a medium bowl.
  • Mash the yolks with mayonnaise, Dijon mustard, lemon juice, salt, and black pepper until smooth and creamy. Taste and adjust the seasoning if needed.
  • Warm the olive oil in a skillet over medium heat. Add the panko and stir often until it turns golden brown and crisp. Remove it from the heat right away so it does not overcook.
  • Spoon or pipe the yolk mixture back into the egg white halves. Make the filling generous so the eggs look full and inviting.
  • Drizzle a little chili oil over each egg, then scatter the toasted panko on top. Finish with chives if you like a fresh herbal note.

Notes

Store deviled eggs in an airtight container in the refrigerator for up to 2 days. For the best texture, keep the toasted panko separate and add it just before serving. These eggs are meant to be served chilled or cool, so reheating is not recommended. If needed, let them sit at room temperature for about 10 to 15 minutes before serving so the flavors come through more clearly.
