Southern Peach Fritters

Ingredients
  

Fritters

  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp sugar
  • 0.25 tsp salt
  • 0.5 tsp cinnamon optional
  • 0.75 cup milk
  • 1 large egg
  • 2 tbsp butter melted and slightly cooled
  • 1 tsp alcohol-free vanilla
  • 1.5 cups fresh peaches peeled and diced or well-drained canned peaches
  • 2 inches neutral oil for frying

Glaze

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tsp lemon juice

Instructions
 

  • Dice the peaches into small pieces so they fold easily into the batter. If using canned peaches, drain them very well and pat them dry.
  • In a large bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon if you are using it.
  • In another bowl, whisk the milk, egg, melted butter, and alcohol-free vanilla until smooth.
  • Pour the wet mixture into the dry ingredients and stir just until combined. Fold in the peaches gently, keeping the batter slightly thick.
  • Heat about 2 inches of oil in a heavy skillet or saucepan. Drop spoonfuls of batter into the hot oil and fry until deeply golden on both sides, working in batches so the pan does not crowd.
  • Drain the fritters on paper towels, then whisk together the glaze ingredients and drizzle or dip while the fritters are still slightly warm.

Notes

Store leftover fritters in an airtight container at room temperature for 1 day or in the refrigerator for up to 3 days. Reheat in the oven or air fryer until warmed through and lightly crisp again. The glaze is best added just before serving.
