Peach Filling

  • 6 cups fresh peaches peeled and sliced, or thawed frozen peaches
  • 1 cup granulated sugar divided
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg optional

Topping

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter melted
  • 1 cup milk
  • 1 teaspoon alcohol-free vanilla

Instructions
 

Prepare the peaches

  • Slice the peaches and place them in a baking dish. Toss with sugar, lemon juice, cinnamon, and nutmeg so they can release their juices and build the cobbler filling.

Mix the batter

  • In a separate bowl, whisk together the flour, baking powder, salt, sugar, milk, melted butter, and alcohol-free vanilla until smooth. The batter should be pourable and lightly thick.

Assemble the cobbler

  • Pour the batter over the peaches. Do not stir. As it bakes, the topping rises around the fruit and creates that classic cobbler texture.

Bake until golden

  • Bake until the top is golden brown and the peach filling is bubbling around the edges. Let it rest for a few minutes before serving so the juices settle.

Notes

Store leftovers covered in the refrigerator for up to 4 days. Reheat individual portions in the microwave, or warm the whole dish in the oven at a low temperature until heated through.
