Ingredients
  

  • 6 cups fresh peaches peeled and sliced, or thawed frozen peaches
  • 1 cup granulated sugar divided
  • 0.25 cup light brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter melted
  • 1 cup milk
  • 1 teaspoon vanilla extract alcohol-free

Instructions
 

  • Preheat your oven and melt the butter in your baking dish. In a bowl, toss the peaches with sugar, brown sugar, lemon juice, cinnamon, and nutmeg until coated and juicy.
  • In another bowl, whisk together the flour, baking powder, salt, and remaining sugar. Stir in the milk and alcohol-free vanilla until smooth, but do not overmix.
  • Pour the batter over the melted butter in the baking dish. Spoon the peach mixture evenly over the batter. Do not stir, the layers will bake together beautifully.
  • Bake until the top is golden brown and the peach filling is bubbling around the edges. Let it cool for a few minutes so the filling settles before serving.
  • Spoon into bowls and enjoy while warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

Store leftovers covered in the refrigerator for up to 4 days. Reheat individual servings in the microwave for a short time, or warm the whole dish in the oven until heated through. If you want the top to crisp up again, use the oven instead of the microwave.
