Ingredients
  

Filling

  • 6 cups peaches fresh, canned, or frozen, sliced
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon or to taste
  • 1 teaspoon vanilla extract alcohol-free

Batter

  • 1 cup all-purpose flour
  • 0.5 cup granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.75 cup milk
  • 0.5 cup unsalted butter melted

Instructions
 

Prepare the Peach Filling

  • In a bowl, toss sliced peaches with granulated sugar, brown sugar, lemon juice, cinnamon, and vanilla. Let sit for about 15 minutes until juicy.

Make the Batter

  • In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Stir in milk and melted butter until just combined. Do not overmix; batter should be thick and creamy.

Assemble and Bake

  • Preheat oven to 350°F (175°C). Grease your baking dish. Pour the batter into the dish, then spoon the peach mixture and its juices evenly over the top. Bake until golden and bubbly, 40–45 minutes. Let cool slightly before serving.

Notes

If using canned or frozen peaches, drain well to avoid excess liquid. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
