Southern deviled eggs with relish are one of those party foods that disappear fast. They are creamy, tangy, and just a little sweet, with that classic filling everyone expects at a gathering. This recipe brings together simple ingredients for a familiar, crowd pleasing bite. The relish adds a bright little pop that balances the rich yolk filling, and the eggs can be made ahead, which makes party prep much easier.
Place the eggs in a saucepan and cover them with cold water. Bring the water to a gentle boil, then turn off the heat, cover, and let the eggs sit until cooked through. Move them to an ice bath so they cool quickly.
Once the eggs are cool, peel them carefully and slice each one in half lengthwise. Gently remove the yolks and place them in a medium bowl.
Mash the yolks with mayonnaise, mustard, relish, pickle juice if using, salt, and pepper. Stir until the mixture is smooth and creamy. Taste and adjust the seasoning if needed.
Spoon or pipe the yolk mixture back into the egg white halves. I like using a small spoon for a rustic look, but a piping bag makes them look extra neat.
Sprinkle the tops with smoked paprika and add chives or parsley if you like. Chill the eggs for at least 15 minutes before serving so the filling firms up and the flavor comes together.
Notes
Start with eggs that are not super fresh, since they are usually easier to peel. An ice bath helps stop the cooking and keeps the yolks from turning chalky. For the smoothest filling, mash the yolks very well before mixing in the mayonnaise. If your filling feels too thick, add a tiny splash of pickle juice or water. If it seems too loose, add a little more mashed yolk or chill it briefly before piping.Store deviled eggs in an airtight container in the refrigerator for up to 2 days. For the best texture, keep them chilled until just before serving. These eggs do not need reheating. In fact, they are best served cold. If you are making them ahead, you can boil and peel the eggs a day early, then fill them closer to serving time.
