Ingredients
  

  • 4 bone-in skin-on chicken thighs or drumsticks
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ cup all-purpose flour divided
  • 2 tablespoons butter or neutral oil
  • 1 yellow onion sliced
  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup whole milk or evaporated milk
  • Fresh thyme or parsley for finishing (optional)

Instructions
 

  • Pat the chicken dry, then season it well with salt, pepper, garlic powder, onion powder, and paprika. Lightly coat the pieces in flour, shaking off any excess.
  • Warm the butter or oil in a large skillet over medium heat. Brown the chicken on both sides until golden, then transfer it to a plate. It does not need to be fully cooked at this stage.
  • Add the sliced onion to the same skillet and cook until softened. Stir in the garlic, then sprinkle in a little flour and cook briefly to remove the raw taste.
  • Slowly pour in the chicken broth, stirring constantly so the gravy stays smooth. Add the milk and keep stirring until the sauce thickens and looks creamy.
  • Return the chicken to the skillet, spoon gravy over the top, and cover. Let everything simmer gently until the chicken is cooked through and the gravy is rich and flavorful.
  • Taste the gravy and adjust the seasoning if needed. Sprinkle with fresh herbs if you like, then serve warm over your favorite sides.

Notes

Keep the heat at medium or medium-low once the gravy is added, so it does not scorch. Browning the chicken first adds a deeper, more comforting flavor to the finished dish.
If the gravy gets too thick, stir in a splash of broth. If it seems too thin, let it simmer uncovered for a few minutes until it reaches the right consistency.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a small splash of broth or milk if needed to loosen the sauce.
