  • Preheat the oven and melt the butter in a cast iron skillet. Stir the brown sugar into the butter so the bottom turns glossy and sweet.
  • Place the peach slices over the sugar mixture in a neat pattern or a casual layer. Either way, the peaches should cover the bottom well.
  • In a bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon if using. This helps the cake bake evenly.
  • In a separate bowl, whisk the sugar, eggs, buttermilk, and vanilla until smooth. Add the dry ingredients and stir just until combined, then fold in the melted butter if your method calls for it.
  • Carefully spread the batter over the peaches. Bake until the top is golden and a toothpick inserted in the center comes out clean.
  • Let the cake rest for a few minutes, then run a knife around the edge and invert it onto a serving plate. Serve warm so the peaches stay soft and glossy.
