Ingredients
  

  • 1 lb chicken breast or chicken thighs cut into bite-sized pieces
  • 2 tbsp cornstarch for coating
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp avocado oil or another neutral oil, divided
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 cups broccoli florets
  • 1 bell pepper sliced
  • 1 cup snap peas or green beans
  • 1 carrot thinly sliced
  • 0.25 cup soy sauce or tamari
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 0.25 cup chicken broth
  • 1 tsp sesame oil
  • 1 tbsp sesame seeds for serving
  • 2 tbsp green onions sliced, for serving
  • cooked rice or noodles for serving

Instructions
 

  • Toss the chicken pieces with cornstarch, salt, and pepper until lightly coated. This helps the outside turn golden and gives the sauce something to cling to.
  • In a small bowl, whisk together soy sauce, honey, rice vinegar, chicken broth, and sesame oil. Set it aside so everything is ready once the pan heats up.
  • Heat oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and cook until browned and cooked through, then transfer it to a plate.
  • Add a little more oil if needed, then cook the garlic and ginger for a few seconds until fragrant. Add the broccoli, bell pepper, snap peas, and carrot, then stir fry until crisp-tender.
  • Return the chicken to the pan and pour in the sauce. Toss everything well and let it simmer briefly until the sauce thickens and coats the chicken and vegetables.
  • Sprinkle with sesame seeds and green onions, then serve hot over rice or noodles.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over medium heat or in the microwave until warmed through. If the sauce looks a little thick after chilling, add a splash of water or broth.
