Ingredients
  

Salad

  • 2 ripe peaches sliced (nectarines work as swap)
  • 4 cup mixed salad greens spinach, arugula, or romaine also work
  • 0.25 small red onion thinly sliced (or substitute with shallot)
  • 0.33 cup feta cheese crumbled (or goat cheese/cotija as options)
  • 0.25 cup toasted pecans walnuts or slivered almonds for variety

Dressing

  • 2 tbsp olive oil
  • 1 tbsp lemon juice or apple cider vinegar
  • 1 tsp honey or maple syrup
  • salt to taste
  • black pepper to taste

Instructions
 

Prep the Ingredients

  • Wash and dry the salad greens. Slice the peaches and onion. Toast the nuts lightly in a dry skillet to bring out their flavor.

Make the Dressing

  • In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper until well combined.

Assemble the Salad

  • In a large bowl, toss the greens with the dressing. Arrange sliced peaches, onion, cheese, and nuts on top. Gently toss or leave layered for a pretty presentation.

Notes

For best flavor, use ripe peaches and freshly toasted nuts. To keep leftovers crisp, store dressing separately and toss just before serving. This salad is best enjoyed fresh.
