Ingredients
  

Crust and Crumble

  • 2 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter cold and cubed
  • 1 egg

Peach Filling

  • 4 cup fresh peaches peeled and sliced
  • 0.25 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1 tsp alcohol-free vanilla

Instructions
 

  • Preheat your oven to 350°F and line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy lifting.
  • In a large bowl, mix the flour, oats, brown sugar, granulated sugar, baking powder, and salt. Cut in the cold butter until the mixture looks sandy with some larger crumbs. Stir in the egg, then reserve about one third of the mixture for the topping.
  • Press about two thirds of the mixture firmly into the prepared pan to form an even bottom crust.
  • In another bowl, toss the sliced peaches with sugar, cornstarch, lemon juice, cinnamon, and alcohol-free vanilla. Let the mixture sit for a few minutes.
  • Spoon the peach filling over the crust and spread into an even layer. Sprinkle the reserved crumble mixture evenly over the top.
  • Bake for 35 to 40 minutes, or until the top is golden and the filling is bubbling at the edges.
  • Let cool completely before slicing into bars so the filling can set properly.

Notes

If fresh peaches are not in season, use frozen peaches that have been thawed and drained well. Canned peaches can also work if drained very well. These bars keep well in the refrigerator for several days.
