Peach Ice Cream Ingredients
- 3 cups fresh peaches peeled and chopped
- 1 cup granulated sugar divided
- 2 cups heavy cream
- 1 cup whole milk
- 4 egg yolks
- 1 tsp alcohol-free vanilla extract
- 1 tbsp lemon juice
- 1 pinch salt
Start by peeling and chopping the peaches. Toss them with a little sugar and lemon juice, then let them sit for several minutes so they release their juices and soften.
In a saucepan, warm the milk, cream, and remaining sugar over medium heat until steaming. In a bowl, whisk the egg yolks. Slowly pour the warm milk mixture into the yolks while whisking, then return everything to the pan and cook gently until slightly thickened.
Remove the custard from the heat and stir in the alcohol-free vanilla and salt. Let it cool, then blend in the peaches or stir them in for a chunkier texture, depending on how you like your ice cream.
Cover the mixture and chill it well in the refrigerator. A cold base churns better, so give it enough time to become fully chilled.
Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions. Transfer the ice cream to a container and freeze until firm enough to scoop.
