Ingredients
  

  • 2 cans sliced peaches drained, with a little juice reserved
  • 1 box yellow cake mix
  • 1 cup unsalted butter melted
  • 1 teaspoon ground cinnamon
  • 1 teaspoon alcohol-free vanilla
  • 0.5 cup chopped pecans optional
  • 2 tablespoons brown sugar optional

Instructions
 

  • Heat the oven to 350°F and lightly grease a 9x13-inch baking dish. Pour the peaches and a bit of their juice into the dish, then spread them out evenly.
  • Stir the cinnamon and alcohol-free vanilla into the peaches. If you like a sweeter filling, sprinkle the brown sugar over the top.
  • Scatter the dry cake mix evenly over the peaches. Try to cover the fruit as much as possible without stirring.
  • Drizzle the melted butter over the cake mix, aiming to moisten most of the surface. Sprinkle on pecans if you are using them.
  • Bake for 40 to 50 minutes, until the top is deep golden and the peach filling is bubbling around the edges. Let it cool slightly before serving.

Notes

Use enough butter to help the cake mix bake into a crisp topping. If some dry spots remain after baking, that is normal, but try to drizzle the butter as evenly as possible. Let the cake rest for 10 to 15 minutes so the filling sets a bit before scooping.
