Ingredients
  

  • 2 cups all-purpose flour plus more for tossing peaches if needed
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 cup unsalted butter melted and cooled
  • 0.75 cup milk
  • 2 eggs
  • 1 tsp alcohol-free vanilla extract
  • 1.5 cups fresh peaches peeled and diced
  • 2 Tbsp coarse sugar optional, for topping

Instructions
 

  • Preheat your oven and line a muffin tin with paper liners or lightly grease the cups. This helps the muffins release easily after baking.
  • In a large bowl, whisk together the flour, sugars, baking powder, salt, and cinnamon. This gives the muffins even flavor and helps the leavening distribute well.
  • In another bowl, whisk the melted butter, milk, eggs, and alcohol-free vanilla until smooth. Make sure the butter is not too hot, so it does not scramble the eggs.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the diced peaches carefully, so the batter stays tender.
  • Spoon the batter into the muffin cups, filling each one about three quarters full. If you want a cobbler-style finish, sprinkle the tops with a little extra sugar or a simple crumb topping.
  • Bake until the muffins are puffed, golden, and a toothpick comes out with only a few moist crumbs. Let them cool in the pan for a few minutes before moving them to a wire rack.

Notes

Store cooled muffins in an airtight container at room temperature for up to 2 days, or refrigerate them for up to 5 days. Freeze fully cooled muffins for longer storage. Reheat briefly in the microwave or in a low oven until warmed through.
