  • 1 Small bowl for dressing

Ingredients
  

  • 4 fresh peaches sliced (nectarines work too)
  • 5 oz arugula or baby spinach
  • 0.5 cup feta cheese crumbled (or goat cheese)
  • 0.5 cup pecans toasted (or walnuts or almonds)
  • 0.25 red onion thinly sliced (or shallots)
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice or balsamic vinegar
  • 2 tsp honey
  • 0.25 tsp salt
  • 0.25 tsp black pepper freshly cracked

Prepare Ingredients

  • Wash and dry the arugula. Slice the peaches and red onion. Toast the pecans lightly in a dry pan for extra crunch.

Make the Dressing

  • In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper until well combined.

Assemble the Salad

  • In a large bowl, toss arugula with half the dressing. Layer on the peaches, onion, feta, and pecans. Drizzle with more dressing just before serving.

Notes

Best enjoyed fresh. Add cheese and nuts just before serving for max texture. Swap nuts or cheese as you like, and try with grilled chicken, shrimp, or alternative vinaigrettes for variation.
