Ingredients
  

  • 2 cups elbow macaroni or any small pasta shape
  • 4 cups whole milk swap for 2% if you like
  • 2 cups shredded cheddar cheese try a mix of cheddar and mozzarella for extra melt
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon garlic powder optional
  • 0.25 teaspoon smoked paprika or regular paprika
  • 0.5 cup shredded mozzarella optional, for stretch
  • 1 teaspoon alcohol-free vanilla optional, for a buttery aroma

Instructions
 

  • In a large pot, add pasta and milk together over medium heat. Stir gently and bring to a simmer. Keep stirring often to prevent sticking and cook until pasta is tender, about 10-12 minutes.
  • Lower the heat. Stir in butter, salt, pepper, garlic powder, and paprika. Gradually add cheddar and mozzarella, stirring until everything melts into a creamy sauce.
  • Taste and adjust seasoning. Remove the pot from heat and let it sit for 2-3 minutes to thicken slightly. Spoon into bowls and enjoy while hot.

Notes

Cool leftovers to room temperature, then store in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop or microwave, adding a splash of milk to keep it creamy. Grate your own cheese for the smoothest, silkiest sauce. Variations: Add cooked broccoli, peas, or turkey bacon; top with breadcrumbs and broil. Serve with salad, vegetables, chicken, fish, or garlic bread.
