Ingredients
  

  • 2 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp salt
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 tsp alcohol-free vanilla extract
  • 3 cups freshly grated carrots
  • 1 cup chopped walnuts or pecans optional
  • 16 oz cream cheese
  • ½ cup butter
  • 4 cups powdered sugar

Instructions
 

  • Preheat your oven and grease your cake pans well. Line the bottoms with parchment paper so the cakes release cleanly after baking.
  • In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, and salt until everything is evenly combined.
  • In a separate bowl, whisk the granulated sugar, brown sugar, oil, eggs, and alcohol-free vanilla extract until smooth and glossy.
  • Stir the dry ingredients into the wet mixture just until no flour streaks remain. Fold in the grated carrots and nuts, if using, being careful not to overmix.
  • Divide the batter between the prepared pans and smooth the tops. Bake until the centers are set and a toothpick comes out with a few moist crumbs attached.
  • Beat the cream cheese and butter together until light and creamy. Add the powdered sugar gradually, then beat until fluffy and spreadable.
  • Let the cakes cool completely before frosting. Stack and frost the layers, then chill briefly if needed to help the cake slice neatly.

Notes

Use freshly grated carrots for the best texture and moisture, since pre-shredded carrots can be too dry. Make sure the cake layers are fully cool before frosting, or the frosting may soften too much. For an extra tender crumb, mix the batter only until combined. A light hand keeps the cake soft instead of dense.
