- 0.75 cup unsalted butter softened
- 1.25 cups granulated sugar
- 3 eggs room temperature
- 0.75 cup plain yogurt or sour cream
- 2 lemons, zested and juiced about 2 lemons total
- 2 tsp vanilla extract alcohol-free, if desired
- 1.5 cups blueberries, fresh or frozen do not thaw if frozen
- 1 cup powdered sugar for glaze
- 2 tbsp fresh lemon juice for glaze
Cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs, yogurt (or sour cream), vanilla extract, lemon zest, and lemon juice. In a separate bowl, whisk together the flour, baking powder, and salt. Fold the dry ingredients into the wet until just combined. Toss the blueberries with 1 teaspoon flour and gently fold them into the batter.
