Ingredients
  

  • 1.5 lb chicken breast or boneless chicken thighs cut into bite-sized pieces
  • 3 tbsp cornstarch divided
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper or to taste
  • 2 tbsp oil for cooking
  • 0.25 cup honey
  • 0.25 cup low-sodium soy sauce
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 0.5 cup broth for extra sauce body
  • 2 tbsp water mixed with 1 tablespoon cornstarch for slurry
  • 1 tbsp sesame seeds for topping
  • 4 cups cooked rice for serving
  • 3 cups steamed broccoli, carrots, snap peas, or bell peppers for serving

Instructions
 

  • Pat the chicken dry, then season it lightly with salt and pepper. Toss it with cornstarch until the pieces are evenly coated.
  • Heat oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook until browned and cooked through, turning as needed so the pieces cook evenly.
  • In a small bowl, whisk together honey, soy sauce, garlic, ginger, rice vinegar, sesame oil, and broth. Stir until smooth.
  • Pour the sauce into the skillet with the chicken and let it simmer for a minute or two. Add the cornstarch slurry and stir until the sauce turns glossy and thick enough to coat the chicken.
  • Spoon rice into meal prep containers, add the chicken, and tuck in your vegetables. Finish with sesame seeds just before serving.

Notes

Store the chicken, rice, and vegetables in airtight containers in the refrigerator for up to 4 days. Reheat gently in the microwave with a splash of water to loosen the sauce. If possible, keep sesame seeds and fresh garnishes separate until serving.
