Ingredients
  

For the Chicken

  • 1.5 lb chicken breasts or thighs boneless, skinless
  • 3 tbsp honey pure
  • 2 tbsp lime juice plus zest from 1 lime
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

For the Mango Salsa

  • 1 mango ripe, diced
  • 0.5 red bell pepper diced
  • 0.25 red onion finely chopped
  • 0.25 cup cilantro fresh, chopped (or parsley as substitute)
  • 1 jalapeño optional, finely minced for heat
  • 1 tbsp lime juice
  • 0.25 tsp salt

Instructions
 

For the Chicken

  • Whisk honey, lime juice and zest, garlic, olive oil, salt, and pepper in a bowl. Coat chicken and let it marinate for at least 20 minutes for best flavor.

  • Heat a skillet or grill over medium heat. Cook the chicken for 6-7 minutes per side or until the juices run clear and it's nicely charred.

For the Mango Salsa

  • Combine mango, bell pepper, red onion, cilantro, and jalapeño (if using) in a bowl. Add a little lime juice, salt, and stir to blend.

Notes

Leftover chicken and salsa should be stored separately in airtight containers, refrigerated for up to 3 days. Chicken reheats best gently in a skillet; salsa is best fresh but can be kept for a day.
