Ingredients
  

  • 1 lb boneless skinless chicken breasts or thighs
  • 3 tbsp honey
  • 2 tbsp lime juice
  • 1 tsp lime zest
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup mango diced
  • 0.5 cup red bell pepper finely chopped
  • 0.25 cup red onion minced
  • 2 tbsp fresh cilantro chopped
  • 1 , avocado optional

Instructions
 

  • In a bowl, whisk together the honey, lime juice, lime zest, olive oil, garlic, salt, and black pepper until smooth and well combined.
  • Place the chicken in the marinade and turn it a few times so every piece is evenly coated. Let it rest while you prepare the salsa, or refrigerate it for a little longer if you have time.
  • Combine the diced mango, red bell pepper, red onion, cilantro, and avocado if using. Add a squeeze of lime juice and a pinch of salt, then stir gently so the fruit stays fresh and bright.
  • Heat a skillet, grill pan, or outdoor grill over medium heat. Cook the chicken until golden, cooked through, and nicely caramelized on the outside.
  • Let the chicken rest for a few minutes before slicing. Spoon the mango salsa over the top or serve it on the side, then enjoy while everything is fresh and juicy.

Notes

Store leftover chicken and salsa separately in airtight containers in the refrigerator. The chicken keeps well for up to 3 days, while the salsa is best enjoyed within 1 to 2 days.
Reheat the chicken gently in a skillet or microwave until warmed through. For the best texture, add the mango salsa after reheating, not before.
