Ingredients
  

Chicken Bowls

  • 1 ½ pounds chicken thighs or chicken breasts
  • 2 tablespoons honey
  • 1 to 2 chipotle peppers in adobo sauce chopped
  • 1 tablespoon adobo sauce
  • 2 cloves garlic minced
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups cooked rice
  • 1 can black beans rinsed and drained
  • 1 cup corn
  • 1 avocado sliced
  • 1 cup cherry tomatoes halved
  • ¼ red onion thinly sliced
  • ¼ cup cilantro chopped

Instructions
 

  • In a bowl, whisk together honey, chopped chipotle peppers, a spoonful of adobo sauce, garlic, lime juice, olive oil, salt, and pepper until smooth.
  • Add the chicken to the sauce and turn it until every piece is well coated. Let it sit for a few minutes while you heat your pan or grill pan.
  • Cook the chicken over medium heat until browned and cooked through, turning as needed so the glaze thickens and clings to the meat. The chicken should be fully cooked and juicy.
  • Let the chicken rest briefly, then slice it into strips or bite-size pieces. Add rice to each bowl, then top with beans, corn, tomatoes, onion, avocado, and the chicken.
  • Spoon any extra sauce from the pan over the bowls, then finish with cilantro and an extra squeeze of lime if you like.

Notes

Use chicken pieces of similar size so they cook evenly. If your sauce thickens too quickly, lower the heat and add a splash of water to loosen it. For the best meal prep results, keep the avocado and cilantro separate until serving.
