Ingredients
  

  • 1 ½ pounds chicken breast or thighs cut into bite-size pieces
  • 3 cups cooked rice white or brown
  • ½ cup BBQ sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • ½ onion diced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ cup chicken broth
  • 1 tablespoon apple cider vinegar
  • 2 green onions sliced, for garnish

Instructions
 

  • Pat the chicken dry, then season it with salt, black pepper, and smoked paprika.
  • Warm the olive oil in a large skillet over medium heat. Add the onion and cook until soft, then stir in the garlic and cook just until fragrant.
  • Add the chicken to the skillet and cook until lightly browned on all sides. It does not need to be fully cooked yet, since it will finish in the sauce.
  • In a small bowl, mix the BBQ sauce, honey, chicken broth, and apple cider vinegar. Pour the mixture into the skillet and stir well to coat the chicken.
  • Lower the heat and let everything simmer until the chicken is cooked through and the sauce thickens slightly. Stir occasionally so nothing sticks to the pan.
  • Spoon the warm rice into bowls, top with the honey BBQ chicken, and finish with sliced green onions. Serve right away while everything is hot and glossy.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. For the best texture, keep the rice and chicken separate if you can. Reheat in the microwave with a splash of broth or water, or warm it gently in a skillet over medium-low heat until heated through.
