Ingredients
  

Muffins

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1 cup milk
  • ½ cup unsalted butter melted
  • 1 teaspoon alcohol-free vanilla extract
  • 1 ½ cups fresh peaches peeled and diced

Streusel Topping

  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ cup unsalted butter cold and cubed

Instructions
 

  • Preheat the oven to 375°F and line a muffin tin with paper liners or lightly grease it.
  • In a small bowl, mix the flour, brown sugar, and cinnamon for the streusel. Cut in the cold butter with a fork or your fingertips until crumbly, then set aside.
  • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  • In a separate bowl, whisk the eggs, milk, melted butter, and alcohol-free vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  • Fold in the diced peaches gently.
  • Spoon the batter into the prepared muffin cups, filling each about three quarters full. Sprinkle the streusel evenly over the tops.
  • Bake for 18 to 22 minutes, or until the muffins are puffed, lightly golden, and a toothpick inserted into the center comes out clean or with a few moist crumbs. Cool for a few minutes before transferring to a wire rack.

Notes

Store cooled muffins in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 5 days. To freeze, wrap individually and store in a freezer-safe bag or container for up to 3 months. Reheat in the microwave for 15 to 20 seconds or in a low oven until warmed through.
