Healthy Sheet Pan Chicken

This healthy sheet pan chicken and veggies is one of my favorite quick dinner ideas for family nights when I want something wholesome, colorful, and easy to clean up. Everything roasts together on one pan, so dinner feels effortless but still tastes full of flavor.
It is simple enough for busy weeknights, but still feels like a real home-cooked meal. The chicken turns juicy, the vegetables get nicely roasted, and the whole dish comes together with very little hands-on work.

Ingredients
  

  • 1.5 lb chicken breasts or chicken thighs
  • 3 cups broccoli florets
  • 2 cups bell peppers chopped
  • 2 cups zucchini chopped
  • 1 cup red onion chopped
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice optional, for brightness

Instructions
 

  • Preheat your oven and line a large baking sheet with parchment paper or foil for easier cleanup. This helps the chicken and vegetables roast instead of sticking.
  • Chop the vegetables into similar-sized pieces so they cook at the same pace. Keep the pieces large enough to hold their shape in the oven.
  • Add the chicken and vegetables to a large bowl, then drizzle with olive oil. Sprinkle in the seasonings and toss until everything is lightly coated.
  • Spread the chicken and vegetables out in a single layer on the baking sheet. Give everything a little space so it roasts well instead of steaming.
  • Bake until the chicken is fully cooked and the vegetables are tender with browned edges. If you like, finish with a squeeze of lemon juice before serving.

Notes

Do not overcrowd the pan, or the vegetables will soften too much. If needed, use two pans so everything has room to roast properly.
Cut the vegetables with cooking time in mind. Denser vegetables, like carrots or potatoes, may need to be cut smaller than softer ones like zucchini.
If you are using chicken breasts, try to choose pieces that are similar in size so they cook evenly. A quick check with a meat thermometer helps you know when dinner is ready.
