Healthy Greek Chicken Bowls

Ingredients
  

  • 1 lb chicken breast cut into bite-size pieces
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 cups cooked rice, quinoa, or couscous
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 2 cups romaine or mixed greens
  • 0.5 cup feta cheese
  • 0.5 cup plain Greek yogurt
  • 1 tbsp tahini optional
  • 2 tbsp fresh dill or parsley chopped

Instructions
 

  • In a bowl, toss the chicken with olive oil, lemon juice, garlic, oregano, salt, and black pepper. Let it sit for a few minutes while you prepare the rest of the ingredients.
  • Warm a skillet over medium heat, then cook the chicken until it is golden on the outside and fully cooked through. Stir occasionally so the pieces brown evenly and stay juicy.
  • Spoon your cooked rice, quinoa, or couscous into serving bowls. Add greens on top, then arrange the cucumber, tomatoes, and red onion around the bowl.
  • Stir together Greek yogurt, a little lemon juice, minced garlic, and tahini if you are using it. Add a splash of water if you want the sauce thinner and easier to drizzle.
  • Place the warm chicken over the grains and vegetables, then spoon the sauce over the top. Finish with feta and fresh herbs, and serve right away.

Notes

Store the chicken, grains, vegetables, and sauce in separate airtight containers in the refrigerator for up to 4 days. Reheat the chicken and grains gently in the microwave or in a skillet with a splash of water. Add the cold vegetables and sauce after reheating so the bowl still tastes bright and fresh.
