Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • salt to taste
  • black pepper to taste
  • orange food coloring optional
  • paprika for garnish
  • black olives or chives for decorating

Instructions
 

  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil, then turn off the heat, cover the pan, and let the eggs sit until fully cooked.
  • Move the eggs to an ice bath or run them under cold water until they are cool enough to handle. Peel them carefully so the whites stay smooth.
  • Slice each egg in half lengthwise and scoop the yolks into a bowl. Mash the yolks with mayonnaise, mustard, vinegar, salt, and pepper until creamy. Add orange food coloring if you want a more dramatic Halloween look.
  • Spoon or pipe the yolk mixture back into the egg whites. A piping bag makes the eggs look extra neat, but a small spoon works just fine.
  • Finish with paprika, then add small olive pieces or chives to make little spooky faces, eyes, or web-like details. Chill until ready to serve.

Notes

Use eggs that are a few days old, since they usually peel more easily than very fresh eggs. For the creamiest filling, mash the yolks until completely smooth before piping. If you are making them ahead, wait to garnish until just before serving so the toppings stay neat.
