Grilled Lime Chicken

When dinner needs to be fast, bright, and satisfying, this grilled lime chicken is one of my go-to answers. The marinade is simple, the flavor is fresh, and the grill does most of the work while you get the rest of the meal ready.
This chicken is full of zesty citrus flavor with just enough garlic and spice to keep every bite interesting. It cooks quickly, works well for busy weeknights, and pairs easily with rice, salad, or grilled vegetables.

Ingredients
  

  • 2 lb chicken breasts or chicken thighs or a mix
  • 1 /4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 /2 teaspoon black pepper
  • 1 tablespoon honey optional
  • 2 tablespoons fresh cilantro optional, for serving

Instructions
 

  • In a bowl, whisk together the lime juice, lime zest, olive oil, garlic, cumin, smoked paprika, salt, pepper, and honey if using.
  • Place the chicken in a shallow dish or a resealable bag, then pour the marinade over it. Turn the chicken until it is well coated.
  • Marinate the chicken for at least 20 minutes, or up to 2 hours in the refrigerator for deeper flavor.
  • Heat the grill to medium-high and lightly oil the grates so the chicken releases easily.
  • Place the chicken on the grill and cook until the outside is lightly charred and the inside reaches a safe internal temperature. Flip once during cooking for even browning.
  • Let the chicken rest for a few minutes before slicing. Finish with fresh cilantro and extra lime wedges if you like.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat or in the microwave in short intervals until warmed through.
