Grilled Chicken Fajitas

Grilled chicken fajitas are one of those meals that feel festive, but still fit into a busy weeknight. The chicken gets smoky and tender, the peppers stay crisp-tender, and everything comes together fast for a table everyone can build their own way.

Ingredients
  

  • 1.5 lb boneless chicken breasts or boneless chicken thighs sliced into strips
  • 3 bell peppers any mix of red, yellow, or green, sliced
  • 1 red onion sliced
  • 3 tbsp olive oil divided
  • 2 tbsp lime juice
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste
  • 8 flour tortillas or corn tortillas
  • optional toppings salsa, avocado, chopped cilantro, shredded lettuce, or sour cream

Instructions
 

  • Whisk together 2 tablespoons olive oil, lime juice, garlic, cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Toss the chicken strips in the marinade and let them sit while you prep the vegetables.
  • Place the sliced peppers and onions in a bowl with the remaining 1 tablespoon olive oil, a little salt, and pepper. Toss well so they grill evenly and pick up a little char.
  • Preheat the grill to medium-high heat. Lightly oil the grates so the chicken and vegetables release easily once they are cooked.
  • Arrange the chicken on the grill and cook until it is browned with nice grill marks and cooked through. Flip once during cooking for the best texture.
  • Add the peppers and onions to a grill basket or directly onto the grates if they are cut large enough. Cook until they soften slightly and develop a little smoky char.
  • Warm the tortillas on the grill for a few seconds on each side. Slice the chicken if needed, then serve everything family-style with your favorite toppings.

Notes

Store leftover chicken and vegetables in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over medium heat or in the microwave in short bursts until warmed through. Keep tortillas and toppings separate for the best texture.
