These Greek chicken skewers are one of those easy meals that feels fresh, colorful, and full of flavor. They are great for busy weeknights, casual cookouts, or meal prep when you want something simple but satisfying.

Ingredients
  

  • 1.5 lb chicken breast or chicken thighs cut into bite-size pieces
  • 0.5 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup red onion optional, for skewering
  • 1 cup bell pepper optional, for skewering
  • 2 tbsp fresh parsley for serving

Instructions
 

  • In a large bowl, whisk together the Greek yogurt, olive oil, lemon juice, garlic, oregano, thyme, salt, and black pepper. Add the chicken pieces and stir until everything is well coated.
  • Cover the bowl and refrigerate for at least 30 minutes. If you have more time, let it marinate for up to 4 hours so the flavor can really soak in.
  • Thread the marinated chicken onto skewers. If you like, add chunks of red onion and bell pepper between the pieces for extra color and sweetness.
  • Preheat your grill, grill pan, or oven broiler. Cook the skewers, turning occasionally, until the chicken is cooked through and lightly charred on the edges.
  • Let the skewers rest for a few minutes, then sprinkle with fresh parsley and serve warm with your favorite sides.

Notes

Store leftover chicken skewers in an airtight container in the refrigerator for up to 3 days. If possible, remove the chicken from the skewers before storing for easier reheating.
