Ingredients
  

  • 1 lb chicken breast or chicken thighs cut into bite-size pieces
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 3 cups cooked rice, quinoa, or couscous
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 0.5 cup Kalamata olives
  • 0.5 cup feta cheese crumbled
  • 0.5 cup plain Greek yogurt
  • 1 tsp alcohol-free vanilla only if making a sweet yogurt sauce variation
  • 2 tbsp fresh parsley or dill chopped

Instructions
 

  • In a bowl, combine the chicken with olive oil, lemon juice, garlic, oregano, salt, and pepper. Let it sit for at least 15 minutes so the flavor starts to soak in.
  • Warm a large skillet over medium heat. Cook the chicken until browned on the outside and fully cooked through, stirring occasionally so the pieces stay juicy.
  • Spoon the cooked rice, quinoa, or couscous into serving bowls. Fluff it lightly with a fork so the base feels soft and ready for the toppings.
  • Top each bowl with cucumber, tomatoes, red onion, olives, and feta. Arrange everything in sections if you like a pretty presentation, or pile it all together for a more relaxed style.
  • Mix the yogurt with a little lemon juice, garlic, and chopped herbs for a simple sauce, then drizzle it over the bowls. Sprinkle with extra parsley or dill before serving.

Notes

Store the chicken, grains, and toppings in separate airtight containers in the refrigerator for up to 4 days. Reheat the chicken and grain base gently in the microwave or on the stovetop, then add the fresh toppings after warming so they stay crisp.
