Ingredients
  

  • 1 lb chicken breast or chicken thighs cut into bite-size pieces
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste
  • 4 cups cooked rice, quinoa, or couscous
  • 1 cup cucumber chopped
  • 1 cup cherry tomatoes halved
  • 0.5 cup red onion thinly sliced
  • 2 cups romaine or mixed greens
  • 0.5 cup feta cheese crumbled
  • 0.5 cup plain Greek yogurt
  • 0.25 tsp alcohol-free vanilla optional
  • 1 tbsp tahini or extra yogurt for the sauce
  • 1 tbsp dill or parsley chopped
  • 1 tbsp water to thin the sauce if needed

Instructions
 

  • In a bowl, mix the chicken with olive oil, garlic, lemon juice, oregano, salt, and black pepper. Let it sit for a few minutes while you prep the rest of the ingredients.
  • Heat a skillet over medium-high heat. Cook the chicken until browned and cooked through, turning occasionally so all sides get a nice finish.
  • Spoon the rice, quinoa, or couscous into serving bowls. Add a bed of greens if you like a fresh, crisp layer underneath.
  • Top each bowl with cucumber, tomatoes, red onion, and the cooked chicken. Sprinkle feta over the top for a salty, creamy bite.
  • Stir together Greek yogurt, tahini or extra yogurt, a little lemon juice, dill or parsley, and a tiny splash of alcohol-free vanilla if you want a mellow, rounded flavor. Add a spoonful of water to thin it if needed.
  • Drizzle the sauce over the bowls and serve right away while everything is fresh and colorful.

Notes

Store the chicken, grains, and vegetables in separate airtight containers if possible. They will keep well in the refrigerator for up to 4 days. Reheat the chicken and grains gently in the microwave or in a skillet, then add the fresh toppings and sauce after warming.
