Chicken

  • 1 lb chicken breast cut into bite-sized pieces
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste

Bowl

  • 2 cups cooked rice or quinoa
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.5 cup red onion thinly sliced
  • 0.25 cup Kalamata olives sliced, optional
  • 0.5 cup feta cheese crumbled
  • 2 tbsp fresh dill or parsley chopped, for garnish

Yogurt Sauce

  • 0.5 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 1 tbsp water as needed to thin
  • 0.25 tsp salt or to taste

Instructions
 

  • Start by cooking your grain of choice and chopping the vegetables. This makes assembly fast and keeps the meal prep process smooth. If you are making the yogurt sauce, stir it together now so the flavors have time to blend.
  • In a bowl, toss the chicken with olive oil, lemon juice, garlic, oregano, salt, and black pepper. Let it sit for a few minutes while you finish the rest of the prep, or marinate it longer if you have extra time.
  • Warm a skillet over medium-high heat, then cook the chicken until it is browned on the outside and cooked through. Stir occasionally so the pieces cook evenly. The chicken should be juicy and lightly golden.
  • Divide the rice or quinoa into meal prep containers or serving bowls. Add the chicken, cucumber, tomatoes, red onion, olives, and feta cheese. Keep the ingredients in neat sections if you want a meal prep look, or layer them for a more casual style.
  • Spoon the yogurt sauce over the top or pack it separately for later. Finish with dill or parsley just before serving for the freshest flavor.

Notes

Store the bowls in airtight containers in the refrigerator for up to 4 days. For the best texture, keep the sauce separate until serving. Reheat the chicken and grain in the microwave until warmed through, then add the cold vegetables, cheese, and sauce. You can also enjoy it chilled if you like a fresh, salad-style bowl.
