Ingredients
  

  • 1 lb boneless skinless chicken thighs or chicken breasts
  • 1.5 cups wild rice blend
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
  • 4 cups chicken broth
  • 1 cup milk or unsweetened cooking cream
  • 2 tbsp butter or oil
  • 2 tbsp all-purpose flour for light thickening
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste
  • 1 cup mushrooms sliced, optional

Instructions
 

  • Heat the butter or oil in a large pot over medium heat. Season the chicken with salt and pepper, then brown it on both sides for a few minutes. It does not need to cook through yet, just pick up a little color.
  • Add the onion, carrots, celery, and mushrooms if using. Cook until the vegetables begin to soften, then stir in the garlic and cook for another minute until fragrant.
  • Stir in the wild rice blend, flour, thyme, and parsley. Pour in the chicken broth and scrape up any browned bits from the bottom of the pot. Those little bits add a lot of flavor.
  • Return the chicken to the pot, cover, and simmer on low until the rice is tender and the chicken is fully cooked. Stir now and then so nothing sticks.
  • When the rice is done, stir in the milk or cooking cream. Let everything simmer for a few more minutes until the sauce looks silky and the whole pot feels cozy and complete.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, warm it gently on the stove or in the microwave with a splash of broth or milk to loosen it up.
