Ingredients
  

  • 6 cups fresh peaches peeled and sliced
  • 1 cup sugar divided
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 4 salt pinch
  • 1 cup unsalted butter melted
  • 1 cup milk
  • 1 tsp alcohol-free vanilla

Instructions
 

  • Preheat the oven to 375°F and lightly grease your baking dish. Toss the sliced peaches with 1/2 cup of the sugar, lemon juice, cornstarch, and cinnamon until the fruit looks glossy and well coated.
  • In a separate bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Stir in the melted butter, milk, and alcohol-free vanilla until you have a smooth batter.
  • Pour the peach mixture into the prepared baking dish. Spoon the batter evenly over the top, letting it spread as it bakes.
  • Bake for 40 to 45 minutes, until the topping is golden brown and the peach filling is bubbling around the edges. Let it rest for a few minutes so the filling sets slightly before serving.

Notes

Use ripe but still firm peaches so they hold their shape while baking. If your fruit is extra juicy, add a little more cornstarch to keep the filling from getting too loose. Serve warm with vanilla ice cream or whipped cream.
