Ingredients
  

  • 6 cups fresh peaches peeled and sliced
  • 1 cup granulated sugar divided
  • 0.25 cup brown sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup butter melted
  • 1 cup milk
  • 1 tsp alcohol-free vanilla

Instructions
 

  • Preheat the oven and lightly grease your baking dish. Toss the sliced peaches with sugar, brown sugar, cornstarch, lemon juice, and cinnamon until everything is evenly coated.
  • In a separate bowl, whisk together the flour, baking powder, salt, and a little sugar. Stir in the melted butter, milk, and alcohol-free vanilla until a smooth batter forms.
  • Pour the peach filling into the baking dish. Spoon the batter over the top in even dollops, letting some peaches peek through for that homemade look.
  • Bake until the topping is fluffy and golden and the peach filling is bubbling around the edges. Let it cool for a few minutes before serving so the filling settles slightly.

Notes

Store leftovers covered in the refrigerator for up to 4 days. Reheat individual portions in the microwave, or warm the whole dish in a low oven until heated through. If you want to freeze it, wrap it tightly after it cools completely, then thaw in the refrigerator before reheating.
