Ingredients
  

  • 6 cups peaches peeled and sliced, fresh or frozen work well
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon alcohol-free vanilla optional

Topping

  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 3 quarters cup brown sugar
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup butter melted or cold and cubed

Instructions
 

  • Preheat your oven and lightly grease a baking dish. Add the sliced peaches to a large bowl, then toss them with sugar, cornstarch, lemon juice, cinnamon, and vanilla if using.
  • In another bowl, combine the oats, flour, brown sugar, salt, and cinnamon. Cut in the butter until the mixture looks crumbly and clumps together when pressed.
  • Spread the peach mixture evenly into the baking dish. Sprinkle the oat crumble topping over the fruit, making sure to cover the surface well.
  • Bake until the peaches are bubbling around the edges and the topping is crisp and golden brown. Let it rest for a few minutes before serving so the filling can set slightly.

Notes

Store leftover peach crisp covered in the refrigerator for up to 4 days. To reheat, warm individual portions in the microwave or place the dish in a low oven until heated through.
