Easy Peach Cobbler

This easy peach cobbler with canned peaches is the kind of dessert that feels homey and comforting with very little effort. The fruit turns bubbly and syrupy under a soft, golden topping, and it is especially lovely served warm with a scoop of ice cream.

Equipment

  • 1 Baking Dish lightly greased
  • 1 Mixing Bowl
  • 1 Whisk

Ingredients

  • 4 cups canned peaches drained slightly
  • 0.5 cup granulated sugar plus more if needed
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.25 tsp salt
  • 0.5 cup butter melted
  • 0.5 cup milk
  • 0.5 tsp ground cinnamon optional
  • 1 tsp vanilla extract alcohol-free

Instructions

  • Preheat your oven and lightly grease a baking dish. Pour the canned peaches into the dish, then spread them into an even layer.
  • In a bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the melted butter, milk, and alcohol-free vanilla until smooth.
  • Spoon the batter over the peaches. It does not need to cover every spot perfectly, since it will spread as it bakes.
  • Bake until the top is set and golden brown, and the peach filling is bubbling around the edges. Let it cool for a few minutes before serving so the juices settle a bit.

Notes

Store leftovers covered in the refrigerator for up to 4 days. Reheat individual portions in the microwave, or warm the full dish in a low oven until heated through. Serve warm with vanilla ice cream, whipped cream, or a drizzle of cold cream.
